Good Eats: Caramel Chex

I made this yummy concoction for my “kids” the other day, and I fell in love with it myself. It’s very rich and sweet, just like kids like it!

In a pot, combine:
1/2 cup brown sugar
1/4 cup butter
1.5 cups marshmallows
Heat and stir on medium, until everything is combined and almost bubbling. I also sprinkled a smidgen of salt in as well, but that's for my taste, you don't have to add it. Then throw in a handful of chocolate chips and stir until it is combined as well. Then put about 2 cups of Chex cereal into a bowl. 

Once the contents of the pot come to slight boil, pour it on top of the cereal and stir, stir, stir until all of the cereal is well coated. After that, pour the contents of the bowl onto a non-greased baking sheet. Spray a rubber spatula with cooking spray to spread it out onto the sheet. Then sprinkle marshmallows and chocolate chips on top (this is totally optional) and let it cool.


We ate some of ours while it was still warm, I guess we’re greedy like that. But it tastes just as good when it’s cool. That’s it, super easy and yummy. Perfect for a family movie or game night, or just to have as a snack.
